Instructions

  1. 1

Preheat oven to 275°F (135°C). Remove the silver membrane from the back of each rack.

  2. 2

Combine brown sugar, paprika, salt, garlic powder, onion powder, pepper, and cayenne. Rub all over the ribs.

  3. 3

Wrap each rack tightly in foil and place on a baking sheet. Bake 2.5 hours, until tender.

  4. 4

Meanwhile, simmer ketchup, bourbon, vinegar, molasses, Worcestershire, and mustard in a saucepan over medium-low heat for 20 minutes until thickened.

  5. 5

Unwrap ribs, brush generously with glaze, and grill over medium-high heat (or broil) for 5–7 minutes per side, glazing every 2 minutes, until lacquered and charred at the edges.

  6. 6

Rest 10 minutes, slice between bones, and serve with extra glaze.

Cook's tips

  • Low and slow in the oven is the secret to fall-apart texture — don't rush it.
  • Reduce the bourbon glaze until it coats the back of a spoon for the stickiest finish.
