Ingredients

- •1 onion, diced
- •4 cloves garlic, minced
- •2 tbsp grated fresh ginger
- •2 tsp ground turmeric
- •1 tsp ground cumin
- •1/2 tsp red pepper flakes
- •1.5 cups red lentils, rinsed
- •6 cups vegetable broth
- •1 (14 oz) can full-fat coconut milk
- •Juice of 1 lemon
- •Salt, pepper, cilantro

Instructions

Heat oil in a large pot. Sauté onion 5 minutes; add garlic and ginger, cook 1 minute.

Stir in turmeric, cumin, and pepper flakes; bloom 30 seconds.

Add lentils and broth. Simmer 20–25 minutes until lentils break down.

Stir in coconut milk; warm through. Season with lemon, salt, pepper.
